Fresh Squeezed Grapefruit Juice
Although the grapefruits in my box had some scars on the outer peel and didn't make the cut for the grocery store, they were still perfect for some homemade juice. I find grapefruits a little too bitter to eat plain but when you fresh squeeze them with a little water and sugar it's so light and refreshing. Perfect on a warm summer day!
The Ugly Rainbow Beets
Just as the old saying goes, you can't judge a book by its cover and the same goes for your vegetables. I will admit that at first glance these rainbow beets are a bit ugly don't necessary look super appetizing. But all you need to do is take out your vegetable peeler and remove the rough outer layer to find the beautiful yellow rings inside. These beets were so sweet and crisp and made the perfect base for colorful salad.
