Watermelon Cucumber Mojitos with Cucumber Flavored Vodka
Here in Sacramento it’s beginning to feel like summer days are just on the horizon, we’ve been enjoying warm weather filled with sunshine. We spent a calm and relaxing Sunday afternoon having a picnic and I made watermelon cucumber mojitos for all the adults.
Traditionally mojitos are made with rum, but I’ve put a spin on the classic recipe by swapping the rum for cucumber flavored vodka. This cucumber flavored vodka really complements the mint found in mojito recipes, and then when you add fresh cucumber and watermelon juice, it’s pretty magical. Plus, the watermelon and sliced cucumbers make for excellent snacks to accompany your drinks!
With quarantine in full swing we’ve been spending lots of time outdoors. One of the best parts about our house is we have a very large backyard filled with flowers and trees. My sister is a teacher and she is currently working remotely, so she’s come to spend some time with us in Sacramento. Having family close during these crazy times gives us even more reason to celebrate, so cheers to all the blessings!
Recipe for Watermelon Cucumber Mojitos
*Makes about 6 cocktails
Ingredients:
8 ounces of cucumber flavored vodka
One whole seedless watermelon
Half of an English cucumber (make sure to use the English cucumber and not the regular kind because the skin is much less bitter and tough)
Freshly squeezed juice from two limes
A handful of fresh mint leaves. Be sure to use your muddler to get all the flavor out.
An 8 ounce bottle of sparkling water
Ice cubes for your cocktail shaker
Bar tools needed:
Cocktail shaker
Cocktail muddler (preferably made of wood)
Glass pitcher
Fine mesh strainer for juicing
Blender
Directions:
Puree the watermelon and cucumber together in your blender.
Use your fine mesh strainer to remove the pulp. You should have some very smooth and fresh juice as the base for your cocktail. Put your juice into the refrigerator to chill. This step can be done as prep work ahead of time.
Take your fresh mint leaves off the stalk and place into your muddler with the lime juice. Use your wooden muddler to gently crush the mint leaves, allowing the flavor to soak up into the lime juice.
When you are ready to serve your cocktails, pour the lime and mint juice mixture in a cocktail shaker. After shaking over ice, strain into a large pitcher.
Finally add the watermelon and cucumber juice into the same pitcher. Then add the Prairie Organic Cucumber Flavored Vodka and sparkling water.
Serve chilled and over ice. Enjoy!
